Step by step method

  • Step 1

    Preheat oven to 375.

  • Step 2

    Remove mushrooms stems and reserve.

  • Step 3

    Wash and dry caps.

  • Step 4

    Brush with melted butter, arrange hollow-side up in baking dish.

  • Step 5

    Season lightly with salt and pepper.

  • Step 6

    Chop stems, and squeeze in towel to remove as much juice as possible.

  • Step 7

    Sauté with shallots in butter for 4-5 minutes.

  • Step 8

    Lower heat, add flour and stir for 1 minute.

  • Step 9

    Stir in cream and simmer until thickened.

  • Step 10

    Add parsley, salt and pepper.

  • Step 11

    Fill caps with mixture.

  • Step 12

    Top each with 1 tsp cheese and drizzle with melted butter.

  • Step 13

    Bake 15 minutes.
